  • 12 frozen mini corn cobs, thawed

  • 1 1/2 teaspoons cayenne pepper
  • 2 teaspoons dried thyme

Instructions

  1. Heat the vegetable oil in a deep fryer or a heavy-bottomed pot over medium heat to reach 350°F (175°C).
  2. Carefully place the corn into the hot oil, working with 3 to 5 cobs at a time, using a pair of tongs. They should start sizzling immediately.
  3. Cook for 3 to 4 minutes, until the corn cobs turn a light golden brown and the edges of the kernels become slightly crispy.
  4. Use the tongs to remove the cobs from the oil, allowing them to drain on paper towels.
  5. In a small mixing bowl, combine the garlic powder, onion powder, paprika, dried oregano, black pepper, cayenne pepper, dried thyme, and salt. Mix well to create the Cajun seasoning blend.
  6. Place the fried corn cobs in a large mixing bowl.
  7. Sprinkle the Cajun seasoning blend and drizzle 2 tablespoons of vegetable oil over the fried corn cobs.
  8. Toss the corn cobs well with a rubber spatula or mixing spoon to ensure even coating with the seasoning.
