- 3/4 cup pitted green olives (canned California Ripe Olives)
- 1 cup giardiniera
- 1 tablespoon red wine vinegar
- 3 tablespoons olive oil
- 1 large muffuletta-style roll
- 1/3 pound thinly sliced soppressata (sweet or hot, as preferred)
- 1/3 pound thinly sliced capicola
- 1/3 pound thinly sliced salami
- 1/3 pound thinly sliced mortadella
- 1/3 pound thinly sliced provolone cheese
- 1 cup baby arugula
- 1/4 cup chopped sweet peppadew peppers or sweet cherry peppers (seeded)
Instructions
Prepare Olive Mixture:
- In a food processor, combine pitted green olives and giardiniera. Pulse until pieces are approximately 1/4 inch in size.
- Transfer the olive mixture to a bowl. Stir in red wine vinegar and olive oil. Set aside. (Olive salad can be made up to 24 hours in advance.)
Assemble the Sandwich:
- Split the muffuletta-style roll in half lengthwise.
- Spread the cut sides with the prepared olive mixture.
- Layer soppressata on the bottom half of the roll, followed by capicola, salami, mortadella, and provolone.
- Arrange arugula and chopped peppers on top of the provolone.
- Place the top half of the roll on the sandwich and wrap tightly with plastic wrap.
- Transfer the sandwich to the refrigerator and allow it to rest for 1 hour or overnight.
To Serve:
- Cut the sandwich into 4 equal wedges.
