Ingredients
- 1 cup crab meat
- 4 eggs
- 3 tablespoons sour cream or yogurt

- 1 stalk green onion, chopped
- 8 large basil leaves, torn

Instructions
- In a skillet over low-medium heat, melt half of the butter. Save the remaining half for the second omelette.
- In a mixing bowl, crack the eggs and whisk them with sour cream, hot sauce, smoked paprika, salt, pepper, and chopped green onion.
- Pour the egg mixture into the skillet and cook closely. Once the edges of the omelette harden, sprinkle half of it with cheese, crab, and torn basil.
- Cover and let it sit until the bottom is fully cooked and easy to lift.
- Use a spatula to fold the omelette in half. If desired, sprinkle the top with extra cheese.
- Remove the folded omelette from the pan.
- Optionally, garnish with more torn basil and a drizzle of Toum (garlic sauce) or sour cream.
